What view would you love from your kitchen window?
Don't have time to read?? Me neither! But I have to admit that I like the idea of a book club and all the fun of the discussions and snacks. This section poses a question and provides a great quickie snack recipe to munch while we answer the challenging questions in life.
What view would you love from your kitchen window? Before I answer this week's question, I am going to make my "Bookless Book Club" snack. You can't go imaginary reading on an empty stomach! I love salsa and chips so this peach salsa is perfect for southern snacking. The combination of flavors is surprisingly good. For those of you nonbelievers, this recipe shows that you can stick a peach in about anything and it will taste good.
Here are the lucky ingredients:

Peach Salsa
1 large ripe peach, peeled and chopped
1 large ripe tomato, chopped
1/4 cup chopped sweet Vidalia onion (a Southern staple!)
2 tablespoons chopped fresh or 1 tablespoon dried cilantro leaves
1 large clove garlic, finely minced
1 teaspoon fresh lime juice
2 teaspoons apple cider vinegar
1 tablespoon canned chopped green chilies, drained
salt and pepper to taste
Mix together all ingredients in food processor. Pulse 3-4 times. Try it now with blue corn tortilla chips or refrigerate overnight.

Now for my answer... The view I would like from my kitchen window would be a beautiful sunrise over a white sandy beach. The window would be open and the breeze would be ruffling the curtains as it brings in the fresh sea air. No one else in the house would be awake and I would have a perfectly blissful moment of quiet and content.... Sipping coffee.... Contemplating life...But wait, I see my personal chef beckoning me out to the deck because he has finished my omelet, squeezed my fresh orange juice, and dolloped the sour cream on my crispy fried potatoes. As I leave my kitchen window I catch a glimpse of the masseuse flexing and getting ready for my morning massage. I'm lovin' this view! After breakfast I go back inside to wash the dishes that were in the sink from last night, but they're gone. The maid service has already tackled that task. I'm really lovin' this view! I gaze out on the peaceful ocean and think that I will always remember the tranquility of the vast blue expanse... which is a good thing to keep in my mind's eye because the view from my real kitchen window is nice, but not quite the stuff that fantasies are made of!
