Two Bite Biscuits
My friend Kim loves these biscuits.
She really loves these biscuits.
She really, really loves these biscuits.
Here she is at my house after eating the biscuits. Look how happy she is. The biscuits are even making my friend Terri happy, too.

I thought I would spread the love and share the recipe for these biscuits. These are the very same ones we had at the MS Walk this past weekend.
Here are the lucky ingredients:

Two Bite Biscuit Recipe
1 cup (2 sticks ) butter
2 cups self-rising flour
1 cup sour cream
Preheat oven to 450 degrees. Grease or spray miniature muffin pans. Combine the butter and flour. Add sour cream. Scoop into muffin tins. Bake 10-12 minutes or until lightly browned.
Here is the Kissing Cousin cheese version:
Two Bite Cheese Biscuit Recipe (They are very similar except you add cheese)
2 cups self-rising flour
2 cups cheddar cheese, grated
8 ounces sour cream
2 sticks butter, melted
Preheat oven to 450 degrees. Grease or spray miniature muffin pans. Combine the flour, cheese, sour cream and butter. Scoop into muffin tins. Bake 10 - 12 minutes or until lightly browned.
I use a scoop so that all the biscuits will be the same size and brown the same.

I generously grease the pan with shortening. You can spray it with spray oil, but I prefer the taste of the solid shortening after they are baked. More artery clogging goodness, I guess.

Scoop them in the pans. These look good enough to eat already. But hold out for 12 minutes and you will taste the best biscuits ever. (You can even turn them into One Bite Biscuits if no one is looking. They are that good.)

You've got to keep these Kissing Cousin Biscuits apart! They are really not all that genetically different. You're just adding some cheese! And if you don't keep them apart, you may end up with some freaky mutant scones.

Oh boy! Kim must be around here someplace! Anyway, I hope you try making a batch of biscuits. They will put a smile on your face, too.

Yes, I REALLY do love these biscuits. They are the best biscuits I have ever had. Thanks for not sharing how many of these biscuits I ate at one sitting!

No Kim, I would never "kiss and tell" how many Kissing Cousin Biscuits you ate at one sitting. Nope, not me. Your secret is safe. Oops, look at the time! It's 5:00 and I have to go and pick up my daughter and her 5 friends so that I can take them to Saks 5th Avenue to use our 5% off coupon for when you buy 5 or more items. Gotta go, so rest assured your secret is still safe with me - at least for 5 minutes or so!
