Brownies! I found the chocolate at last!
As you have been reading, I was searching for chocolate amongst all the brightly colored vegetables we had at our MS Walk. After two days of grazing, we finally brought out the chocolate and not a moment too soon. This is a great brownie recipe from The Cat Who... Cookbook called Polly's Picnic Brownies (p. 190 in case you want to skip the index and get right to the chocolate.)

I see that I forgot to put eggs in the picture and some poor chicken had to give up her entire clutch because this recipe calls for 6 eggs! So here is a picture of the tag-along eggs. Now, if you can just merge the photos in your mind..

Polly's Picnic Brownies
4 1-ounce squares baking chocolate
3/4 cup butter
6 eggs, beaten
3 cups sugar
2 cups all-purpose flour
1 teaspoon salt
21 teaspoons vanilla extract
1 cup chopped nuts
Preheat oven to 350 degrees. Melt chocolate with butter. Cool slightly. In a large bowl, beat eggs and sugar together. Combone flour and salt with egg mixture. Stir chocolate mixture into flour and egg mixture. Add vanilla extract and nuts. Pour into greased and floured 11-inch by 15-inch pan. Bake 35 minutes. Spread with frosting. Cut into squares.
Frosting
1/2 cup butter, softened
1/2 cup cocoa
4 cups powdered sugar
1/3 cup milk
Beat butter until fluffy. Add cocoa and beat until well-blended. Add powdered sugar alternately with milk. Beat until smooth. Blend in vanilla extract.
1 teaspoon vanilla extract
I usually mix by hand with a bowl scraper or rubber spatula. I realize some people call pancake flippers a spatula and scrapers spatulas. This is getting very confusing. The yellow thingy in the picture is what I use to mix the brownies by hand. Electric mixers tend to dry out the finished brownie. At this point in the recipe, I have mixed the eggs and sugar and I am in the process of adding in the flour and salt.

Next, I pour in the slightly cooled chocolate mixture. The aroma is wonderful!

Here is the finished brownie. It is a really moist brownie. Sometimes they have the appearance of not being all the way done, but if you bake them for 35 minutes, they will be done. Just be sure to use the 11X15 inch pan. They freeze well but usually we don't have many left to freeze. In this particular batch, I didn't add nuts, but they are very good with nuts, too.

At last, the hunt is over. Chewy, chocolate and oh-so-good! Tomorrow it's back to the carrots!
