Rosemary Turkey Patties

Since it was 99 degrees outside today, burgers on the grill was not an option!  Here is a great change of pace from ordinary hamburgers.

Rosemary Turkey Patties

1 pound ground turkey
1/4 cup soft breadcrumbs
1 egg, slightly beaten
3 tablespoons finely minced onion
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon dried whole rosemary, crushed

Combine all ingredients.  Shape into 6 patties.  Place patties in a 12X8X2 baking dish coated with cooking spray. Bake uncovered at 350 degrees for 30- 45 minutes or until done, turning once.  Serve with Rosemary Sauce.

Rosemary Sauce

1 tablespoon butter or margarine
1/2 cup chopped onion
1 clove garlic, minced
1 tablespoon all-purpose flour
1/2 teaspoon dried whole rosemary, crushed
1 teaspoon dried parsley
1/4 cup plus 2 tablespoons water or chicken broth
1/4 cup plus 2 tablespoon skim milk

Melt butter in a small saucepan.  Add onion and garlic; saute until tender. Add flour, rosemary and parsley; cook stirring constantly for 1 minute.  Gradually add water and milk.  Cook over medium heat, stirring constantly, until thickened.

Step 1 Mix all ingredients.

Step 2  Scoop out the turkey.

Step 3 Form the patties.  I used the scoop to flatten them.  Whew, I made it through the whole recipe without touching the raw turkey with my bare hands!  I know some people find it therapeutic to mix things with their hands, but I am not one of them. I have lots of mixing spoons and a scoop for every occasion!

Step 4 Eat!   I served the Rosemary Turkey Burgers with a Bow Tie Pasta and fresh beets.  Look out tomorrow for the Bow Tie Pasta recipe.  It is a really good summer salad.  Enjoy!
