Pound Cake Waffles

I love waffles for breakfast, especially these.  The texture is softer than most waffles and very rich and flavorful.

I have owned several wafflers and this is my favorite.  Why?  Is it because of the pretty flower shapes?  No...  Is it because it matches my other kitchen appliances?  No...  Both of those are true but the real reason I love it is because of this wonderful green light that tells me my waffle is done!!!

I can't tell you how many waffles I have split apart on the griddle looking to see if they are done.  I know, I know.  I'm supposed to wait until the steam has stopped to open it, and that would seem to be an easy task, nevertheless, I am unable to do it...burned waffles, split waffles, runny in the middle waffles...I have made them all until I got this machine.  Now with the help of the green "eye" I can make the perfectly cooked waffle. Money well spent.

Here are the lucky ingredients:

Pound Cake Waffles

1 cup sugar
1/2 cup butter (1 stick)
2 large eggs
2 teaspoon finely chopped orange zest (optional)
2 teaspoon orange juice (optional)
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup buttermilk

In a mixing bowl, beat sugar and butter until light and fluffy.  Beat in eggs, one at a time.  Add orange zest and juice (optional).  In another small bowl, whisk together flour, salt, baking powder, and baking soda.  Add flour mixture alternately with buttermilk. Batter will be thick.  Spoon batter into hot, greased waffler and bake according to waffler directions.

Step 1: Mix together the butter and sugar.  Here is what happens when your butter isn't soft enough.  Flying sugar mess.

Step 2:  Add eggs, one at a time.

Step 3:  Add dry ingredients alternately with the buttermilk. You can also add the orange zest and orange juice.  The batter will be thick.

Step 4:  Spray the waffler with oil, scoop the batter, and close the lid.

Look for the light! Yeah!

Step 5:  I put peach jam on the waffle along with syrup and a bit of zest!  Hope you have a delicious morning!!!
