Blueberry Cobbler

 I tried a new recipe for Blueberry Cobbler.  As always, I made a few adjustments to the recipe and gave it a try.  It turned out really good.   I'm going to give you a sneak peak at the finished cobbler.

Summer Berry Cobbler

1 tablespoon butter, softened
2 cups fresh or frozen berries
1 tablespoon lemon juice
1/2 teaspoon cinnamon (optional)

3/4 cup granulated sugar
1 1/2 cups all-purpose flour
1/4 teaspoon salt
3 tablespoons butter, softened
1 teaspoon baking powder
1/2 cup milk

1 1/2 teaspoons cornstarch
3/4 cup granulated sugar
1 cup boiling water

Preheat oven to 375 degrees.  Use the 1 tablespoon of butter to generously grease the bottom and sides of an 8X8 dish.  Place bluberries in dish and sprinkle with lemon juice.  Add cinnamon if desired.

Combine the 3/4 cup sugar, flour, salt, butter, baking powder and 1/2 cup milk.  Pour batter over blueberries.  In a small bowl whisk together the cornstarch and 3/4 cup sugar.  Put sugar mixture over the blueberries and batter.  Pour 1 cup boiling water over all.  Bake at 375 degrees for 1 hour.  Serve warm with ice cream.  Double recipe for a 13 X 9 in pan.

 



Step 1:  Grease the pan leaving any remaining butter in the pan after coating the bottom and sides.



Step 2:  Add the blueberries.  I used frozen berries. 




Step 3:  Mix the batter.




Step 4:  Pour on the sugar, cornstarch , and water. Bake for 1 hour.




Here is the magical transformation from watery, soupy batter to warm, yummy cobbler. Amazing.

    Hi, Julie, I love your picture's and website, I work now at 50 year's old as a bike messenger in Atlanta, I ride 70 mile's a day for 5 day's a week, not what I would have hoped, but the upside is I feel 25 year's younger, and act the same. I sometime's park my car, as I live in Carrollton, at Headland-Delowe Shopping Center, and ride my bike in from there. I am enamored with the way East Point has not changed from my childhood, which include's your's, so I take my camera with me occasionaly. East Point is a land frozen in time, nothing has changed for 40 year's. If you would like to see some of these or have me ride around and make some let me know, I would be glad too. You lived in the apartment's on Delowe, there was a pool, we played marco-polo, your Mom made brownie's. larry.
