Happy Birthday Terri

At this point, it was no surprise for Terri when I pulled up in her driveway with these chocolate cupcakes!   I think 7 other birthdays preceding this one might have given the surprise attack away! Nevertheless, we had a great visit and I hope she enjoyed the treat.





Rich Chocolate Cake


2 cups all-purpose flour
2/3 cup unsweetened cocoa
1 1/4 teaspoon baking soda
1/4 teaspoon baking powder
3 eggs
1 2/3 cup sugar
1 teaspoon vanilla
1 cup mayonnaise
1 1/3 cup water

Preheat oven to 350 degrees.  Grease a 9X13 inch pan or line cupcake tins with paper.  In a medium bowl, mix flour, cocoa, soda and powder.  In a large bowl, mix eggs and sugar and vanilla for 3 minutes or until light and fluffy, scraping occasionally.  Reduce to low and beat in mayonnaise until blended.  Add flour mixture alternately with water.  Begin and end with flour.  Pour into prepared pan.  Bake at 350 degrees for 30 minutes or until pick comes out clean. 

Chocolate frosting
1/3 cup butter, melted
1/3 cup cocoa
1/2 teaspoon vanilla
2 cups powdered sugar
2 tablespoons milk, more as needed

Mix all ingredients until light and fluffy.  Add more milk as necessary to make a spreading consistency. Frost cooled cake.



Now, if you read this recipe closely, you may have noticed that there is mayonnaise in the cake.  It makes a great substitute for the shortening or butter in a cake.   I decided to take a picture of the mayonnaise in front of the button tree I made so that I could show two things with one photo.  You remember I made the green button tree earlier.  Well, I decided to make the white one and so I photographed it with the mayonnaise to kill two birds with one stone. 



What I didn't plan on was the mayonnaise Elf in the photo.  I guess I killed three birds with one stone. (At the time, I told my daughter that she was in my mayo photo whereupon she grinned, posed, and said "Good!"   Not the 'get out of the photo' response I was looking for.)




Step1:
Beat the eggs, sugar, and vanilla until fluffy.
Blend in the mayo.




Step 2:  Sift the dry ingredients and add to the egg mixture alternately with the water.



Step 3:  Pour into greased pan or cupcake papers. I made this recipe twice.  Once for a cake and once for cupcakes for Terri.  Here is the cake batter in the pan.




And here are the cupcakes. I made two sizes of cupcakes and added Lindt chocolate balls to the tops.
