Pumpkin Whoopie Pies
For those of you that just can't get enough Whoopie Pies, here is another variety to try. This recipe is from the Libby's pumpkin people so when the recipe is done it tastes exactly like their pumpkin roll that you see on the cans only it is waaaay easier to make. I love the pumpkin roll but what a chore lining the jelly roll pan, dumping the baked cake onto a powder sugar linen towel, rolling it up warm, unrolling it and putting on the filling and then rerolling. Whew. I'm tired just thinking about it.
This recipe involves plopping the scoop of batter on a greased pan, baking for 10 minutes and cooling. It's that easy and they taste great.
Pumpkin Whoopie Pies
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup (1stick) butter, softened
1 1/4 cups granulated sugar
2 large eggs, lightly beaten
1 cup Libby's Pure Pumpkin (NOT the pumpkin pie mix - it already has the spices in it)
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Lightly grease baking sheets. Combine flour, baking powder, baking soda, cinnamon, ginger and salt in a medium bowl. Beat butter and sugar in a large bowl on medium speed for 2 minutes. Add eggs, one at a time, beating well after each addition. Add pumpkin and vanilla extract; beat until smooth. Stir in flour mixture until combined. Drop by heaping tablespoons onto prepared baking sheets. Bake for 10 - 13 minutes or until springy to the touch. cool on baking sheets for 5 minutes; remove to wire racks to cool completely.
Cream Cheese Filling
4 ounces cream cheese, at room temperature
6 tablepsoons butter, softened
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
Beat cream cheese, butter and vanilla extract in small bowl on medium speed until fluffy. Gradually beat in powdered sugar until light and fluffy. Spread filling onto flat side of one cookie; top with another cookie.
Step 1: Beat together butter and sugar. Add eggs, one at a time.
Step 2: Add dry ingredients.

Step 3: Place heaping tablespoonfuls onto greased baking sheet. Bake about 10 minutes. Cool and fill. This is a very easy recipe. Enjoy!
