I came home today to see this in my backyard.

If you’re thinking squirrel birthday party, then you would be correct.  (Sorry, Davis.  It’s not a clown drone stuck in our tree.)

 

I thought she might like some Almond Shortbread Cookies since squirrels like nuts.

I was right.

Almond Shortbread Cookies

 

3/4 cup butter, softened

1/4 cup + 2 tablespoons sugar

1 large egg, separated

1 teaspoon almond extract

2 cups all-purpose flour

1 cup sliced almonds

Preheat oven to 375 degrees.  In a large bowl, beat butter and 1/4 cup sugar until light and fluffy.  Beat in egg yolk and almond extract until blended.  Reduce mixer speed to low and gradually beat in flour.  Beat just until blended.  Divide dough in half.  Use a large, ungreased cookie sheet.  Turn sheet over and sprinkle flour on cookie sheet.  Roll half of the dough onto the bottom of a cookie sheet.  Brush dough with half of egg white, 1 tablespoon of sugar, and 1/2 cup sliced almonds.  Use a pizza cutter to cut dough into 1-inch squares. Repeat with remaining dough on another cookie sheet.  Bake at 375 degrees for 12-15 minutes or until edges are lightly browned.  After removing from oven, use a knife to re-cut the squares.  Allow to cool a few minutes on the pan and then transfer to a wire rack to cool completely.  Serves 36 squirrels.

Roll onto cookie sheet.

Brush off excess flour.  Add egg white, sugar, and nuts.  Use a pizza cutter to cut into squares.

Okay, if you’ve read this far, I will tell you that although the balloons were in the backyard today, the squirrel was only in Google.  Apparently there is a tame squirrel in Pennsylvania that lets people dress him or her up and take pictures.  Don’t try this at home kids unless you enjoy rabies shots or other various diseases.

I’m having a bit of camera trouble which is why my posts have been sparse.  I will try to get more on here even if the photos are bad.  I dread selecting a new camera.  Too many choices and too much money. I’ll let you know how it goes.
