Bacon Cups

This recipe for Bacon Cups is probably the most requested brunch recipe that I make.  It is very easy and looks so tempting filled with grits, eggs, and cheese.

Bacon Cups

  • 2-3 slices bacon per cup
  • aluminum foil
  • cupcake tins

Preheat oven to 425 degrees.  Invert and cover the bottom of a cupcake tin with aluminum foil. Use generous amounts of the foil and make sure to ease the foil in between the raised bumps of the tin. Wrap 2 – 3 slices of bacon around the bottom of the covered tin.  You can weave the bacon or place it on there criss cross.  It doesn’t really matter.  Bake the bacon for 30 minutes at 425 degrees.  Remove the bacon to a cookie sheet and bake until the insides are browned.  Drain on paper towels.  Fill with grits, eggs, and cheese.

 

The foil catches the dripping grease while the bacon is in the oven. Easy clean up.
