Banana Pudding and Ski Jumping

I just made some banana pudding.

We were watching ski jumping.

Those people are crazy.

 

Homemade Vanilla Pudding

2 cups whole milk

1/2 cup sugar

3 tablespoons cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

1 tablespoon butter

Heat the milk over medium heat until bubbles form around the edge.  Do not boil.  In a small bowl mix together the sugar, cornstarch and salt.  Slowly stir it into the hot milk.  Cook until thickened enough to coat the back of a spoon. Do not allow to boil. Remove from heat and stir in the vanilla and butter.  Place plastic wrap over the top of the pudding and place in the refrigerator to cool.

To assemble pudding place Lorna Doone shortbread cookies in the bottom of a 9X9-inch baking dish.  In a chilled bowl whip a 1/2 pint container of whipping cream until soft peaks form.  Add 1/2 teaspoon of vanilla and 1 tablespoon of powdered sugar.  Alternate layers of pudding, whipping cream, bananas, and cookies to create the banana pudding.
