Chewy Chocolate Cookies

These are my second favorite cookies of all time.  My very favorite is frosted sugar cookies, however these are worthy challengers.  I first received this recipe at a Cookie Swap about 20 years ago.  My friend Lynn hosted the shindig, and Maryelizabeth brought these cookies.  I have made them ever since.

Beware that the batter is really stiff, so be sure to soften your butter first.  I didn’t do that one year and I actually burned out the motor on my hand mixer.  Smoke was coming out the back but I kept beating until the mixer finally quit altogether. I finished by hand.   I’m surprised that it didn’t catch on fire.  All worth it, of course, for one taste of these incredible cookies.

They are versatile too.  Here are 10  variations to the recipe:

1.  make ice cream sandwiches with them

2.  put frosting in the middle of two cookies

3.  dust with powdered sugar or powdered peanut butter

4.  dip cookie half way into melted white or dark chocolate and then chill

5.  put marshmallow fluff in between two cookies

6.  place a mint patty between two warm cookies

7.  add nuts to the dough

8. use them for the “hamburger” patty in hamburger cookies

9.  drizzle with caramel sauce

10.  frost with vanilla frosting and then dust with crushed peppermint

Hershey’s Chewy Chocolate Cookies

1  1/4 cups butter (that’s 2 and 1/2 sticks!)

2 cups sugar

2 eggs

2 teaspoons vanilla

2 cups all-purpose flour

3/4 cup cocoa

1 teaspoon baking soda

1/2 teaspoon salt

Preheat oven to 350 degrees.  Cream butter and sugar in a large mixing bowl.  Add eggs and vanilla; blend well.  In a smaller bowl mix together flour, cocoa, baking soda and salt.  Blend into creamed mixture.  Drop by tablespoonfuls onto greased cookie sheets.  Bake at 350 degrees for 8-10 minutes.  Do not overbake.  Cookies will be soft and will puff during baking and then flatten upon cooling.  Cool on cookie sheet one minute.  Remove and cool on wire rack.  Makes 72 cookies.

Mix together butter, sugar, eggs, and vanilla.

In a separate bowl, stir together dry ingredients.

Add dry ingredients to creamed mixture.
