Coffee Cake and Secret Societies

Are you aware that secret societies are all around us?  I was able to get a rare photo of one such group meeting right here in our midst.z3

They call themselves the White Pants Society or WPS for short.  Entrance into this group is determined by your connections to current members and your ability to wear white pants for 6 hours without getting stains on them.  Count me out!  I’m notorious for my spillage.  The password into this secret society is “We don’t need no stinkin’ bleach,”

They are mostly a genteel group enjoying flowers and other niceties at each meal.

And they also have top secret devices for world domination or at least pesky flying insect control. (Special thanks to Barbara for my much needed gift.)

A recipe for one of  their special treats comes from another alleged member, my aunt, who I’m sure presides over her own group in another state.  I can provide the recipe but not the members’ identities.  World domination is at hand.

Butter Cream Coffee Cake

1/3 cup plus 1/2 cup butter

3/4 cup plus 1 1/2 cups all-purpose flour

1/3 cup packed brown sugar

1 teaspoon cinnamon

1/2 cup chopped nuts

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

2/3 cup sugar

2 eggs

1 cup sour cream

1 teaspoon vanilla

Preheat oven to 325 degrees.  Grease a 9X9 pan.  Cut 1/3 cup butter, 3/4 cup flour, 1/3 cup brown sugar, and cinnamon into a dry crumbly mixture.  Add nuts and set aside.  Sift 1 1/2 cup flour, baking powder, bakind soda and salt.  In a separate bowl, cream 1/2 cup butter, add sugar and beat until light and fluffy.  Add 2 eggs one at a time.  Add vanilla.  Beat until blended.  At low speed, alternate dry ingredients and sour cream.  Spread in pan.  Sprinkle with nut mixture.  Bake for 45-55 minutes or until cake tests done. Cool completely.  Split and fill with buttercream.

Buttercream

1/4 cup flour

1/2 teaspoon salt

1 cup milk

2/3 cup butter

1 cup sugar

1 teaspoon vanilla

Cook flour, salt, and milk together, stirring constantly to make a thick sauce.  Cool.  In a separate bowl, cream butter and sugar together.  Gradually add flour mixture.  Beat well. Add vanilla.  Spread between layers of coffee cake.  Refrigerate. Remove 15 minutes before serving.

      That recipe is always a hit! It’s a staple for company and I might even serve it to my family once in a while.
