Crafty Weekend at Lake Jackson

I just got back from a relaxing weekend of crafting with my friends at Lake Jackson.  I took my Olive Spread and my Julabel Sauce for snacks and also enjoyed the tasty food from others, too.

As promised Friday, here is the Olive Spread recipe.  This recipe came from The Blue Willow Inn Bible of Southern Cooking.

Olive Spread

1  7.5-ounce jar pimiento stuffed olives, drained and chopped

1/2 small onion, diced

2 hard cooked eggs, chopped

1 cup chopped  and toasted pecans

1 cup mayonnaise

Mix all ingredients together and chill one hour before serving.

I will share the crafts we made in the next post because it will be a long one and I want to keep the recipe separate.  I’ll close this post out with images of the gorgeous azaleas cascading down the hillside at the lake house.  It was a sight to see.

There were vivid pink, pale pink, and white bushes.  I need to start using a camera again instead of my phone.  It is much quicker to whip out the camera on the phone but I miss the clear photos from a camera.

I remember when I was younger we would take my grandparents to Callaway Gardens when they would come to visit so they could see the azaleas in spring.  It was a dreaded trip for an 8-year-old but an eagerly anticipated trip for my grandparents.

 

Ooooh, a bush.  Oooooh another bush.   “Big” excitement for a young-un. I knew then that I would NEVER care about flowers or landscaping.  Too dull.

Now, of course I get to eat my words because I love looking at flowers and taking photos of them.  I’ve even planted an azalea or two.

    If none of you try theJulabel Sauce dip you are missing out on a little piece of heaven on earth. However Julie makes these amazing edibles from such a big and giving hearts full of love. BTW the olive dip is amazing as well! Perfect weekend with amazing women.
