Frozen

We have thoroughly enjoyed the Disney Movie Frozen this year.  The songs are catchy and the message of the movie is a good one.  In honor of the movie I made some Cheesecake Frozen Pops.  Forget that it’s 14 degrees this morning with a high of about 36 today.  When I pick a theme food, we are going to eat it.

The door scene was the cutest part of the movie, I think.  It was sweet but sentimental and is one of the breakout songs from the movie – “Do You Wanna Build a Snowman?”.    I do love the song but it tends to stick in my brain.  Yes! Yes!  I will build the snowman!

I bought one of the Zoku Quick Pop Maker at Williams Sonoma last summer and I put it away when colder weather came, but when I found this recipe for Cheesecake Quick Pops, I knew I had to try it no matter what the temperature outside.

I like the Zoku.  It does as it says and makes “quick” pops, however my Pop Maker only has two slots, so it is a little tedious making pops for a crowd.  I would suggest buying as big a pop maker as possible (or several) so you can make them faster than two at a time. I’m going to start hunting for another one or two of them to add to my collection.  The pops I made in cups were pretty but took much longer to freeze.

Cheesecake Frozen Pops

Adapted from Ice Pops by Shelly Kaldunski

6 graham crackers

1 tablespoon sugar + 1/4 cup sugar

2 tablespoons melted butter

8 ounces cream cheese, room temperature

1/4 cup heavy cream

1/2 cup half and half

3/4 teaspoon vanilla extract

Crush graham crackers and add butter and sugar, blend well.  (I did this in the food processor in a jiffy!) In another bowl, using an electric mixer, mix the cream cheese until light and fluffy.  Add the sugar and beat until smooth.  Gradually add the cream and half and half.  Add the vanilla last.  Blend until smooth.  Divide the mixture into the pop molds. Top with a tablespoon of the graham cracker mix. (You will have leftover graham cracker mix for dipping the pops into or for snacking later.)  Freeze pops until set.

I also made strawberry drizzle for the pops.

Strawberry Drizzle

1/2 package frozen strawberries with sugar added (16 ounce package)

1 teaspoon corn starch

1 tablespoon cold water

Heat the strawberries over low heat until warm.  Use an immersion blender to crush the berries.  Strain the seeds and place the juice back in the pan .In a small bowl, add cornstarch to 1 tablespoon cold water.  Add cornstarch mixture to the strawberries and heat until slightly thickened.  Place strawberry drizzle in a small container and refrigerate until cold.

This is a delicious recipe and I will make it again, whether I’m watching a movie or not.  It tastes just like a piece of cheesecake but without the eggs or the hour of baking it.

Pour the mix into the mold.  I also made some in cups with hors d’oeuvre picks.

Strain the strawberries to remove most of the seeds.
