Garlic Herb Spread

I had one last package of cream cheese remaining from Sam’s Club. I bought a rather large box of them around New Years and most were turned into experimental cheese cakes by the ManCave Dwellers downstairs.  Olivia led the band of boys in creating cheesecakes such as Peach Cobbler Cheesecake and Red Velvet Cheesecake.  Their creativity in baking put my Rice Krispie Treats to shame.

Tonight I pondered what I should do with this one last little 8-ounce bar of goodness.  I ran across a recipe for a Garlic Herb Spread and thought it would be perfect with my rather large box of crackers I also purchased at Sam’s Club.  I made a few alterations to the recipe and tonight you will see the outcome.  And if you lived in my home, you would smell the outcome.  Zowie, my garlic was pungent.  There will be no fear of vampires tonight.  One whiff of my breath will send them back to the crypt or wherever they come from.

I like the spread a lot but I would definitely urge you to add your garlic a little at a time and taste test along the way.  I don’t want to add a bunch more ingredients to tone down the garlic but I also don’t want to have to set out warning flares just because I decided to walk through a room with my mouth open.  The recipe was very good, just too strong for me. I liked the texture of the butter with the cream cheese and I especially liked the taste when paired with the sesame crackers.  The two tastes complemented each other quite well in spite of the strong garlic. 

Garlic Herb Spread

1 8 ounce block cream cheese, softened

1 stick butter, softened

1 small clove garlic, minced  (I used a very large one and it was too much!)

1/2 teaspoon salt

1/4 teaspoon dried oregano

1/4 teaspoon dried basil

1/2 teaspoon dried dillweed

1/4 teaspoon cracked black pepper

1/4 teaspoon dried thyme

Combine cream cheese and butter in a food processor or in a bowl with a mixer.  Beat until light and fluffy.  Add the seasonings and blend well.  Refrigerate up to one week. Great on crackers, hot pasta, or as a spread for breads. Freezes well for up to two months.

Now off to brush my teeth, gums, tongue and tonsils and anything else I can reach.  I do not want to taste garlic all night.  Tomorrow night is weaving night.  In my post tomorrow, I will show you some of the items I have made with the cloth I have created. Spiffy!
