Graham Cracker Pie

For me there is always one recipe in a book that sells that cookbook to me.  If I open the book and see a good one, then I will probably buy the book.  Basically I have a bunch of $10 and $20 dollar recipes because often I don’t make anything else out of the book.

This recipe was a freebie of sorts.  I teach in an elementary school and nowadays in the library if a book doesn’t get checked out a certain amount of times, the computer tracks it and out it goes. Robocop for libraries.   That’s what happened to this book.  Ironically, I had been at another elementary school and found the recipe for Graham Cracker Pie in the book and made it and loved it. The book is copyrighted from 1957 so I was surprised to find it on the shelf. Was there really anyone other than me checking it out?   Then, I moved to another school and soon found the book in a discard pile.  Score!  Thank you, Robocop!

Feeling vintage’y’ with my 1957 recipe, I used my Colonial Homestead pie plate from my Royal China Collection.  I have a mishmash of pieces from Royal China Pottery.  That is where my grandfather and great grandfather worked in Sebring, Ohio. These plates are easy to find on ebay but I am beyond out of room for more dishes so I just have a few pieces here and there of some of their sets.  This is one of my favorite pie plates.

As for the recipe, if you like the taste of graham crackers and are tired of only using them as the “bread” for s’mores or the crust of cheesecake, then this is the recipe for you.  It is easy to make and most of the time you will already have what you need on hand.

Not at all sure the Pilgrims had this at the first Thanksgiving but  it’s a cute book for kids and a tasty treat for everyone.Honey Graham

Graham Cracker Pie

16 whole graham crackers (the rectangle unbroken)

1 cup sugar

1/4 teaspoon salt

1 teaspoon baking powder

1/2 cup chopped pecans

3 eggs

1 teaspoon vanilla

Crush graham crackers.  Add sugar, salt, baking powder and nuts to graham crackers.  Separate eggs.  Beat yolks until foamy.  Add vanilla and yolks to crumb mixture.  Beat egg whites until stiff.  Fold gently into crumb mixture.  P{our into buttered pie pan.  Bake 35 minutes at 350 degrees.
