Hot Lemon Chicken Salad

My last treat for game day is a Hot Lemon Chicken Salad.  Doesn’t sound too good from the title but I actually liked it. The Hot means heated not spicy but I’m sure you could add red pepper if you wanted it hot.  The lemon with the chicken made for a bright spot on the appetizer heavy table.  The game is about to start so I can’t type much.  But I wanted to get the recipe on today so here it is.

Lemon Chicken Salad

2 cups chopped cooked chicken

1 cup chopped celery

1/2 cup sliced almonds

1 teaspoon grated onion

1 teaspoon grated lemon rind

1 tablespoon lemon juice

1/8 teaspoon black pepper

2/3 cup mayonnaise

1 cup shredded cheddar cheese

1 cup crushed potato chips.

Preheat oven to 375.  Combine chicken, celery, almonds, onion, lemon rind, lemon juice, and pepper in a bowl; mix well.  Add mayonnaise and toss to mix.  Spoon into a shallow 1 1/2 quart casserole.  Sprinkle with cheese and potato chips. Bake at 375 degrees for 25 minutes or until cheese is bubbly.

My table is complete with some Falcons cupcakes from Publix.  Now, time to watch the game!

    Chicken salad with cheese and potato chips on top? Sounds delicious!

      It was very lemony so you might want to taste as you go along. Everything is cooked as you assemble so it is easy to adjust as you sample.
