Late Night Banana Bread

Banana bread is not my first choice of dessert but I had three rotten bananas and I don’t like to throw out food so I made the ubiquitous rotten banana banana bread. I think that was a run-on sentence. Or was it?  That’s a fragment.  I hate grammar.

It’s late.  I actually didn’t know how late it was and I started making the banana bread and now I’m committed to stay up for an HOUR till it bakes.  My bed calls.  I’m tired.

Even the dog is asleep.

Late Night Banana Bread

3 ripe bananas

1 cup sugar

1 stick butter, softened

2 eggs

1 teaspoon vanilla extract

3 cups self-rising flour

1 cup whole milk

1 cup chopped nuts (I used pecans)

Grease and flour 2 loaf pans.  Preheat the oven to 350 degrees.  Mix together the bananas and the sugar.  Add the eggs and vanilla.  Alternate the flour with the milk.  Do not overbeat.  Fold in the pecans.  Place the batter in the loaf pans.  Bake for one hour or until bread tests done. Allow to cool in the pans for 5 minutes and then turn out onto wire racks to cool.  Finally, go to bed!
