Davis turned sixteen today.  We enjoyed our traditional birthday brunch to celebrate.

We had other things to eat — fluffy scrambled eggs, cheese and cream grits, normal bacon, and homemade pancakes.  Then, we had birthday cake.

This was a white buttermilk cake.  Very moist and delicious.

Davis opened his gifts.  He liked his Yellow Power Ranger shirt!

White Buttermilk Cake

Adapted from Add a Pinch

1 cup butter, softened

1/2 cup solid shortening (Crisco)

3 cups sugar

5 eggs, room temperature

3 cups all-purpose flour (I use White Lily)

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup buttermilk, room temperature

2 teaspoons vanilla extract

 

Grease and flour 3  9-inch cake pans.  Preheat oven to 350 degrees.  In a large mixing bowl, beat together the butter and shortening; gradually add the sugar.  Add eggs one at a time. In a small bowl, sift together the flour, baking powder, and salt.  Add the flour mixture to the egg mixture alternating with the buttermilk. Add the vanilla extract.  Pour batter into prepared pans and bake 25-30 minutes or until cake tests done. Place cake pans on wire racks and allow to cool 3 minutes before turning out cakes onto the wire racks.  Allow to cool completely and frost with your favorite frosting.
