The snow wasn’t exactly the best for sledding but it was fun to try anyway. Davis spent some time outside today and I joined him with the dog. Most of his friends live in other neighborhoods. He was a lone wolf today.
We came inside for a friendly game of Risk. Davis achieved world domination in no time flat.
Lunch was a hearty bean and meatball soup that doesn’t call for a cup of butter (Dorothy) or a bunch of calories (Dorothy). 🙂 It is a Publix Aprons Simple Meals. My mom made a few adjustments to the recipe and I will list it as she made it.
Meatball Soup with Spinach
1 pound lean ground beef
1/2 cup Italian style bread crumbs
1 egg, beaten
1 + 1 tablespoons tomato paste
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 cloves garlic, chopped
1 tablespoon oil
1/4 cup diced onions
1/4 cup chopped celery
3 cups fresh spinach leaves
2 cans cannellini beans, drained
1 32-ounce box chicken stock
1/2 cup grated Parmesan cheese
Combine ground beef, bread crumbs, egg, 1 tablespoon tomato paste, 1/4 teaspoon salt, and 1/4 teaspoon pepper until blended. Shape into 1 inch meatballs (about 25). Preheat a large stockpot on medium-high. Place oil in pan and add meatballs. Cook and turn 6-8 minutes until browned. Remove meatballs from pan and set aside. Add onions,celery and garlic to pan and cook and stir 2-3 minutes until onions soften. Add spinach, cook 2-3 minutes or until spinach begins to wilt. Reduce heat to medium-low; stir in beans, stock, 1 tablespoon tomato paste, meatballs and remaining salt and pepper. Simmer 10 minutes. Top with Parmesan cheese and serve.
