As promised it was marshmallow cutting time this evening.  (See earlier post today.)

We mixed together the powdered sugar, cornstarch and cocoa powder.  Spread it out on a cutting board and then dumped the marshmallow slab on the cutting board.  We peeled off the aluminum foil and got to work.  First, we covered a blade with vegetable shortening (Crisco) and then dipped it in the powdered sugar mix.  Then, we started cutting.

After cutting each piece we made sure to dip each end in the sugar mix.  We didn’t want any sticking together.  That’s why they are so shaggy looking.

This was one of the best new recipe finds I’ve had.  The marshmallows are creamy and dense.  Really great with the hot chocolate which was a concoction of Ghirardelli Hot Chocolate Mix, cocoa powder, granulated sugar, whole milk, and half and half.  Very rich and satisfying for that late night chocolate fix.  Give it a try!  Then you can join the “I make my own marshmallow” crowd from the band of tv chefs who claim that distinction.  The Stay Puft Man won’t like you but I believe that was taken care of in Ghostbusters so all is well.
