Clearly I fell out of my blog groove for posting.  We went to Disney soon after I wrote the last post.

I thought I would come home and use some of the many Disney photos I took and match them up with some of the Disney cookbook recipes I have, and then make a blog post showing them together.  Well, that didn’t work.  The recipes I tried at home weren’t successes and I didn’t want to waste time altering the recipes or remaking the recipes so they would be bloggy beautiful.  So I will show you one of the things we ate at Disney and share the untried recipe.  Here is our photo of Tonga Toast from the last morning at Captain Cooks (casual dining) in the Polynesian Resort.

And here is the recipe from the book. This is one I didn’t try at home but, hey, how hard can it be to jam a banana inside a piece of bread and fry it?  Famous last words.

Tonga Toast

  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1 loaf unsliced sourdough bread (8 inches long)
  • 2 bananas, peeled
  • 1 quart canola oil, for frying
Mix the sugar and cinnamon together and set aside.  Slice the bread into four 2-inch thick slices.Cut each banana in half crosswise, and then length-wise. Poke a hold in one side of the bread and pull out some of the bread, stuff a half banana int it.  Repeat with each slice of bread.  Heat the oil to 350 degrees in a deep fryer or large pot.  Place one bread slice in to the oil for 1 minute  or until light brown.  Turn and fry for another minute on the other side.  Remove bread from the pot and toss it in the sugar and cinnamon mixture.  Repeat for each piece.
Lots of calories.  I would like to give this recipe a make-over if I try it at home. But Disney is all about decadence and drama… not diets, so I am printing it the way they have provided it.

Then, school started and we have been busy getting back in the school groove.
