Walnut Chicken

Monday’s new recipe was a keeper.  We made the Chicken and Walnuts from the weekly menu and it was great.  We will definitely make it again.  Well, we are two for two.  We cooked according to plan Sunday and Monday.  I love planning and ahead and having the recipe and ingredients ready.

Walnut Chicken

 

3 tablespoons soy sauce

2 tablespoons lime or lemon juice

1 tablespoon sugar

3 tablespoons vegetable oil (peanut)

1 large onion, thinly sliced

1 cup chopped broccoli

3 boneless skinless chicken breasts, sliced in small pieces across the grain

1 teaspoon dried basil

1/2 cup walnuts, chopped

 

Whisk together the  soy sauce, lime juice, and sugar.  Set aside.  Heat 1 1/2 tablespoons oil in a wok or skillet over high heat.  Add onion and broccoli and cook 1 – 2 minutes or until desired tenderness.  Add the chicken and basil and cook until chicken is opaque throughout. Stir in the soy sauce mixture and walnuts.  Serve over rice.
