It is finally getting a little colder in Atlanta so soup was a good choice for tonight. I was Christmas shopping earlier and it got colder and colder each time I came out of a store. Then, disaster happened. My car broke down. Triple A came and carted the poor beast away.
Anyway,here is the soup. I tend to throw things together as I cook so this recipe is approximate. Feel free to experiment.
Broccozini Soup
1 pound fresh broccoli
1 zucchini
1/2 cup fresh spinach
1/3 cup chopped onion
1 tablespoon butter
salt and pepper to taste
2 cups chicken broth.
1/2 cup half and half
Simmer broccoli, zucchini, onion, and butter in about 1 cup water until vegetables are tender . Add chicken broth. Cook a few minutes longer. Use an immersion blender to blend vegetables until smooth. Add half and half and stir gently. Garnish with Romano cheese and mini croutons. Serve with grilled cheese strips.
