Happy New Year! Pumpkin Chocolate Chip Muffins

Although the title would lead you to believe that I’m wishing Happy New Year to my muffins, I am, in fact, sending the greetings to you.  These muffins are how we started out the new year this morning so I thought I would pass on the recipe.

Pumpkin Chocolate Chip Muffins

  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 1/2 cups canned pumpkin
  • 1/2 cup half and half
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

Preheat oven to 400 degrees.  Place cupcake papers in 30 muffin tin openings.  Mix sugar, oil, and eggs.  Add the pumpkin and cream.  In a separate bowl mix together dry ingredients.  Add flour mixture to pumpkin mixture using a whisk or spoon.  Do not overmix.  Add chocolate chips.  Scoop batter in paper liners.  Add streusel topping. Bake for 15 – 20 minutes.  Makes 30 muffins,

Steusel Topping

  • 1/2 cup brown sugar
  • 1/4 cup butter, softened NOT melted
  • 4 tablespoons oats
  • 4 tablespoon chopped pecans
  • 4 tablespoons all-purpose flour
Here is what the streusel topping looks like on the batter. It just floats on top.

Here is a muffin after it is baked.  They were really good but next time I  want to try covering the entire top by doubling the streusel recipe.  Any excuse to make them again!  For now, the leftovers are going in the freezer to have for busy mornings.
