Mint Chocolate Chip Cake

Chocolate lovers will adore this Mint Chocolate Chip Cake.  I made it to commemorate my cousin Lori’s birthday.  When we were younger, Lori would always order mint chocolate chip.  This time I decided to turn the tables on a traditional birthday cake and ice cream.  I made the cake the flavor of the ice cream.

Mint Chocolate Chip Cake and Dark Chocolate

When you make this cake, be sure to use the dark chocolate cocoa powder.  It gives the cake such a deep, rich color and is perfect with the mint frosting.  You can adjust the amount of mint you put in the frosting all the way from full-on toothpaste strength down to barely-there-hint-of-mint.  I prefer the toothpaste strength myself.  Why eat a Mint Chocolate Chip Cake if you don’t come out of it with fresh breath and a minty glow about you?  What other cake offers as much?

Birthdays Need a Splendid Cake

I enjoy matching friends and family members to a special cake. You may not remember much about your birthday meal but it seems you always remember the glowing confection placed in front of you while everyone sings at full voice wishing you birthday cheer. If you don’t have a cake and candles, then you don’t have a birthday wish either.  It’s all a very important part of celebrating the one day of the year that is all about YOU and no one else.

That is unless you were born in September and specifically on September 9th because Reader’s Digest claims that 9/9 is the most popular day in the year for births in the United States. Apparently it has something to do with having a little extra snuggle time over Christmas vacation. Ironically, the least popular birthday is December 25th.  That has to do with the fact that scheduled births are usually not scheduled on Christmas day.  So, whatever your special day is, I hope you have a delicious cake and that all your wishes come true.
